<span style="font-size: x-large;"><b>Bailey's Irish Cream Chocolate Cheesecake</b></span><br />
<i>(recipe adapted from AllRecipes)</i><br />
<br />
<b>Ingredients</b><br />
1 1/2 cups chocolate cookie crumbs (<i>whirl them in a food processor</i>)<br />
1/3 cup confectioners' sugar<br />
1/3 cup unsweetened cocoa powder<br />
1/4 cup unsalted butter (<i>I used Kerrygold, an Irish butter</i>)<br />
3 (8 ounce) packages cream cheese, softened <br />
1 1/4 cups white sugar<br />
1/4 cup unsweetened Cocoa powder<div>
3 Tbsp all-purpose flour<br />
3 eggs<br />
1/2 cup sour cream<br />
1/4 cup Bailey's Irish Cream<br />
<br />
<b>Directions</b><br />
<b>Crust:</b><br />
Preheat oven to 350 degrees. In large bowl, mix together cookie crumbs, confectioners' sugar, and 1/3 cup cocoa. Add melted butter and stir until well mixed. Pat into bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes; set aside. Increase oven temperature to 450 degrees F.<br />
<br />
<b>Cheesecake:</b><br />
In large bowl, combine cream cheese, white sugar, 1/4 cup cocoa, and flour. Beat at medium speed until well blended and smooth. Add eggs one at time, mixing well after each addition. Blend in sour cream and Bailey's; mixing on low speed. Pour filling over baked crust.<br />
Bake at 450 for 10 minutes. Reduce oven temperature to 250 degrees F, and continue baking for 60 minutes.<br />
With knife, loosen cake from rim of pan. Let cool, then remove rim of pan. Chill before serving.<br />

<b><i>Tip: If your cake cracks, dampen spatula and smooth top, then sprinkle with some chocolate wafer crumbs.</i></b><br />

Happy St. Patrick's Day. <b>Today's post is about bread</b>! <br />

The first recipe, <b>Stout Chocolate Cherry Bread, </b>is a yeast bread, so because it has several rises, you'll want to get started early. <br />
<br />
Then I move on to classic <b>Irish Brown Breads</b>. You can use a <b>Guinness Bread Mix or make your own from scratch</b>. With the <b>Brown Bread Guinness Mix</b>, you usually would add raisins, but I think it works well with <b>chopped dark chocolate (or dark chocolate chips)</b>. You add treacle (yes, you can substitute molasses, but you can find treacle online or at specialty food stores).<br />
<br />
The <b>Guinness Brown Bread from scratch recipe</b> doesn't use <b>chocolate chips</b>, so I would spread <b>Nutella</b> on the bread to keep with the theme of this <b>chocolate blog</b>. Your choice. <b>It's a lovely brown bread.</b><br />
<br />
<span style="font-size: x-large;"><b><br /></b></span><div><span style="font-size: x-large;"><b>GUINNESS CHOCOLATE CHERRY BREAD</b></span><br />

This recipe first appeared in <b>CookingLight in January 2003</b>. Thanks to the <a href="http://www.myrecipes.com/recipe/stout-chocolate-cherry-bread-10000000408867/">Internet, it's still available to all</a>. I've made it once, and it's really delicious. The <b>Guinness</b> adds a special flavor. Chocolate and dried cherries are staples here at my house!<br />
<br />
<b>Ingredients</b><br />
4 1/4 cups bread flour, divided<br />
1 (12-ounce) bottle Guinness Stout <br />
1 package dry yeast (about 2 1/4 teaspoons)<br />
1 tablespoon granulated sugar<br />
1 teaspoon salt<br />
1/2 cup dried tart cherries <br />
4 ounces bittersweet chocolate, coarsely chopped (or dark chocolate chips)<br />
Cooking spray <br />
1 teaspoon water<br />
1 large egg white, lightly beaten<br />
<br />
<b>Preparation</b><br />
Lightly spoon flour into dry measuring cups; level with a knife. Combine 2 cups flour, beer, and yeast in a large bowl, stirring with a whisk. Cover and refrigerate 8 hours or overnight.<br />
Remove mixture from refrigerator; let stand 1 hour.<br />
Add 2 cups flour, 1 tablespoon granulated sugar, and salt; stir until a soft dough forms. Turn dough out onto a floured surface. Knead until smooth and elastic (about 8 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel tacky). Knead in cherries and chocolate.<br />
Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size. (Gently press 2 fingers into dough. If indentation remains, dough has risen enough.)<br />
Punch dough down; cover and let rest 5 minutes. Shape dough into a 9-inch round; place on a baking sheet lined with parchment paper. Lightly coat dough with cooking spray. Cover and let rise 1 hour or until doubled in size.<br />
Preheat oven to 350°.<br />
Uncover the dough. Combine water and egg white, stirring with a whisk, and brush over dough. Make a 1/4-inch-deep cut down the center of dough using a sharp knife.<br />
Bake at 350° for 30 minutes or until bread is browned on bottom and sounds hollow when tapped. Remove from pan; cool on a wire rack.<br />

Thanks to <b>The Nibble</b>, I was alerted to <b>Guinness Bread Mix</b>. You have to add a few delicious ingredients, but it's worth it. As I mentioned above, I add chopped chocolate instead of raisins, but that's up to you. Since I add chocolate chunks to the bread, I suggest serving it with mascapone or goat cheese or plain. This mix is available in specialty food stores and online. There are 3 packets in each Bag which is a good value. The ingredients in the mix include Whole Meal Flour, Plain Flour, Oatmeal, Baking Soda, Brown Sugar and Salt. You need to add Butter, Black Treacle (dark molasses), Chopped Dark Chocolate (instead of raisins), milk, and a 1/2 cup of Guinness.<br />

No time to get the mix, try this recipe from J<a href="http://blog.discoverireland.com/"><b>ump into Ireland (Discover Ireland)</b></a> for <b>Guinness Brown Bread</b>. It's not as sweet as the recipe above, so instead of adding chocolate chips or chunks, serve it with a Hazelnut (Nutella) spread.. just to keep it in the chocolate family! I've changed a few thingss in the recipe, but I know you'll like it.<br />

<span style="font-size: large;"><b><span style="font-size: x-large;">GUINNESS BROWN BREAD from Scratch</span> </b></span><br />

<b>Ingredients</b><br />
4.5 cups Bread Flour<br />
1.1 cups Steel Cut Oats<br />
A pinch of salt<br />
A pinch of sugar<br />
3.5 ounces unsalted butter<br />
34 ounces buttermilk<br />
12.3 ounces treacle (molasses)<br />
5 ounces Guinness Stout<br />
1 level teaspoon of baking soda<br />
<br />
<b>Directions</b><br />
Combine all of the dry ingredients in a large bowl and mix together well and set aside.<br />
Melt the butter in a small saucepan, add the buttermilk and heat until tepid.<br />
Now add the treacle to the saucepan and stir slowly until well combined through the buttermilk.<br />
Remove the pot from the heat.<br />
Add Guinness and stir.<br />
Make a well in the middle of dry ingredients, add the liquid and stir gently to make a moist paste.<br />
Preheat your oven to 350°F and prepare baking pan by brushing inside with butter and dusting with flour.<br />
Pour mixture into pan and place in preheated oven for ten minutes, then reduce heat to 275°F and bake for 40 more minutes.<br />
After removing bread from oven, allow to cool on a bread rack for 10 minutes.<br /><b>
Serve with Nutella.</b><br />

For the <b>Love of Pi(e</b>)! Today is <b>National Pi(e) Day</b>. In order to celebrate and keeping in mind that <b>St. Patrick's Day</b> is just around the corner, I've gone back into my archives for a favorite <b>Chocolate Pie Recipe: </b><b>Guinness Chocolate Silk Pie</b>. I can't think of a better pie to celebrate both holidays! You can use any <b>stout</b>, of course, but <b>Guinness</b> is easily available! I make a <b>chocolate cookie crust</b>, but you can use a graham cracker crust or a vanilla wafer crust. <span style="font-size: large;"><b>GUINNESS CHOCOLATE SILK PIE </b></span><br />
<br />
<b>Chocolate Cookie Crust</b><br />
<b><br /></b>
<b>Ingredients</b><br />
30 chocolate wafers (<i>Nabisco Famous Chocolate Wafers</i>)<br />
5 Tbsp unsalted butter, melted and slightly cooled<br />
Dash of Salt<br />
1/2 tsp pure vanilla extract<br />
<br />
<b>Directions</b><br />
Whirl cookies in food processor until finely ground.<br />
Put crumbs in mixing bowl; combine crumbs, butter, salt, and vanilla; stir until crumbs are moistened.<br />
Press mixture evenly across bottom of 9-inch pie plate and up sides of pan; pack tightly so crust is even and compacted.<br />
Bake in 350° oven for 6 minutes until crisp.<br />
Cool before filling.<br />
<br />
<b>Filling:</b><br />
12 ounces dark chocolate (65-75% cacao), chopped<br />
24 large marshmallows<br />
Pinch of salt<br />
2/3 cups Guinness<br />
1/3 cup evaporated milk<br />
1 tsp vanilla<br />
1 Tbsp creme de cacao or Kahlua<br />
<br />
<b>Directions</b><br />
Preheat oven to 350 F.<br />
<i>Make crust (see above)</i><br />
<br />
Place chocolate, marshmallows, and salt in blender or food processor. Blend until well mixed and chocolate is finely ground.<br />
In two separate pans, heat Guinness and evaporated milk until very hot, but not boiling.<br />
Slowly pour hot Guinness over marshmallows and chocolate in blender. Add hot cream. Cover and blend for one minute.<br />
Add vanilla and creme de cacao or Kahlua. Blend for one minute.<br />
Pour into cooled crust and refrigerate for several hours or overnight.<br />

<b>Directions:</b><br />
In very large bowl, combine milk chocolate chips, semisweet chocolate chips, marshmallow cream, vanilla extract, Irish Cream, and nuts (<i>if you are adding them</i>). Set this mixture aside.<br />
Line 10 x 15 baking pan with foil and spread lightly with butter.<br />
In medium saucepan, combine granulated sugar, evaporated milk, and butter. Bring to gentle boil over medium heat and cook slowly, stirring constantly for about 10 minutes.<br />
Pour milk mixture into chocolate chip mixture. Stir slowly by hand to combine. It is very important to do this by hand and <b>NOT</b> use any kind of mixer.<br />

Every year for <b>St. Patrick's Day</b>, I post several <b>Guinness recipes.</b> No big surprise because when I think of <b>Ireland</b>, I think of <b>shamrocks, rainbows, leprechauns</b>...and <b>Guinness</b>.<br />

<b>Guinness Stout</b> was founded in<b> 1759 </b>when Arthur Guinness signed a 9000 (!) year lease on a brewery in Dublin. That brewery is still the center of Guinness operations, and all the Guinness sold in the UK, Ireland, and North America is brewed there! FYI for those of you in the U.K., Guinness is served chilled in Ireland and the bottles read "Serve Extra Cold."<br />
<br />
<b>St. Patrick's Day</b> calls for a <b>Chocolate Guinness Cake</b>! I've put together three recipes. One of my favorite <b>Chocolate Guinness Cake Recipes</b> is from the <b><a href="http://www.nytimes.com/2004/12/08/dining/083NREX.html?_r=0">New York Times</a> (12/8/04)</b>. There are several other recipes I like, including an "Easy" <b>Chocolate Guinness Cake </b>made from a cake mix and a whole bottle of Guinness. The final one on today's post is from Chef Brian Leth of Vinegar Hill House and appeared in People Magazine in 2012 (<i>see below</i>). My friend <b>Loanne Heavey Slapar</b> swears by it (see photo below). It's pretty similar to the one from the NYT, but I'll bet it all comes down to the cocoa .. and a bit of technique. Being Irish helps, too!<br />

<span style="font-size: x-large;"><b>1. CHOCOLATE GUINNESS CAKE </b></span></div>

<b>Ingredients</b></div>

Butter for pan<br />
1 cup Guinness stout<br />
10 Tbsp unsalted butter<br />
3/8 cup unsweetened DARK cocoa<br />
2 cups superfine sugar<br />
3/8 cup sour cream<br />
2 large eggs<br />
1 Tbsp pure vanilla extract<br />
2 cups all-purpose flour<br />
2 1/2 tsp baking soda<br />
<br />
<b>Directions </b><br />
Heat oven to 350 degrees. Butter 9-inch springform pan
and line with parchment paper.<br />
In large saucepan, combine Guinness and
butter. Place over medium-low heat until butter melts, then remove from
heat. Add cocoa and superfine sugar. Whisk to blend.<br />
In small bowl, combine sour cream, eggs, and vanilla; mix well. Add to
Guinness mixture. Add flour and baking soda, and whisk again until
smooth. Pour into buttered pan, and bake until risen and firm, 45
minutes to one hour. Place pan on wire rack and cool completely in
pan.<br />
Remove cake from pan and place on platter or cake stand. <br />
<b>Ice the top with cream cheese icing.</b><br />
<br />
The
NYT recipe uses <b>a white cream cheese icing</b>. <i>I<b>f
you use a white cream cheese icing, you can ice the top of cake only,
so that it resembles a frothy pint of Guinness. If you use chocolate,
well.... you'll be eating more chocolate!</b></i><br />

Preheat oven to 350F.</div>

Combine cake mix, Stout, oil, and eggs in mixing bowl. Mix on
medium speed just until combined. Add bittersweet chocolate and gently
stir in. Divide between two 8” cake pans, coated with cooking spray.
Bake at 350F for 20-25 minutes or until toothpick comes out clean
when stuck in middle.<br />
Remove from oven and cool in pans
for about 15 minutes, then transfer to cooling rack. Once cooled,
frost with a rich <b>Chocolate Cream Cheese Frosting</b>. (see recipe above or use canned)<br />

This great recipe for <b>Chocolate Irish Soda Bread Pudding</b> comes from <a href="http://www.karott.com/"><b>www.karott.com</b></a>. Their site is all about the Irish: <b>Guinness, Gaelic Language, Travel</b>. I've never made the <b>Guinness Ice Cream</b>. I've always just added <b>Vanilla Ice Cream</b> or <b>Whipped Cream</b> to this <b>Soda Bread Pudding</b>, but the <b>Guinness Ice Cream</b> sounds great. I've included<b> the ice cream recipe </b>in case you have the time and inclination. This is perfect for <b>St. Patrick's Day</b>!<br />
<br />
<span style="font-size: large;"><b>Chocolate Irish Soda Bread Pudding</b></span><br />
<br />
<b>Ingredients:</b><br />
2 loaves of Irish soda bread<br />
4 ounces butter, melted<br />
6 eggs<br />
1/2 cup brown sugar<br />
1/4 cup raisins<br />
1 quart heavy cream<br />
8 ounces semi sweet chocolate (chopped)<br />
<br />
<b>Directions:</b><br />
Cut 1 loaf or half of the bread in cubes. Process the remaining half in a food processor.<br />
Place bread cubes and crumbs in a bowl and cover with melted butter, toss and set aside.<br />
Place cream in a sauce pan and bring to a boil. Place chopped chocolate in a bowl and set on top of the cream and let it act as a double-boiler to melt the chocolate.<br />
In another bowl beat eggs and sugar until pale and thick.<br />
When the cream comes to a boil pour it over the chocolate whisking quickly. Then temper the chocolate-cream mixture into the egg mixture. <i>this isn't as difficult as you think :-)</i><br />
Mix in the raisins.<br />
Pour this mixture over the bread, mix well, and let it soak overnight or at least 2 hours. There should be a sense of moistness. If the mixture looks dry add another 1/2 cup of heavy cream.<br /><br /><div>
Preheat oven to 375 Degrees F.<br />
Butter a 9 inch cake pan. Pour mixture into pan. Place in a hotel pan and fill 3/4 up the sides of cake pan with cold water.<br />
Bake at 375 for 1/2 hour. Turn pan, reduce heat to 325 F and bake for another 1/2 hour or until a toothpick inserted comes out dry.<br />
<br />
Top with Vanilla Ice Cream, Whipping Cream or Guinness Ice Cream <br />
<br />
<span style="font-size: large;"><b>Guinness Ice Cream </b></span><br />
<br />
<b>Ingredients:</b><br />
12 ounces Guinness<br />
2 cups heavy cream<br />
2 cups whole milk<br />
3/4 cup granulated sugar<br />
1 vanilla bean, split in half lengthwise<br />
6 egg yolks<br />
<br />
<b>Directions</b><br />In a large saucepan, simmer the Guinness until reduced by 3/4 in volume, about 8 minutes. Combine the cream, milk, and sugar in a medium, heavy saucepan. Scrape the seeds from the vanilla bean into the pan and add the vanilla bean halves. Bring to a gentle boil over medium heat. Remove from the heat.<br />
<br />Beat the egg yolks in a medium bowl. Whisk 1 cup of the hot cream into the egg yolks. Gradually add the egg mixture in a slow, steady stream, to the hot cream. Cook over medium-low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F. on an instant-read thermometer, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean container. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Chill in the refrigerator for 2 hours.<br />
<br />Remove from refrigerator and add the Guinness reduction, whisking until well blended. Pour into the bowl of an ice cream machine and freeze according to the manufacturer's instructions. In my 'real' life, I often facilitate <b>chocolate pairings </b>-- with wine or with beer - and sometimes with Scotch and other Spirits. But over the years since my youth, there have been <b>many chocolate cereals on the market</b>. I'm not going to say that <b>Chocolate Cereal</b> is healthy, but since
you'll probably add some milk, you'll be getting your calcium. Alas the chocolate in breakfast cereal was pretty artificial, so didn't provide antioxidants. However, chocolate cereal beat grabbing a candy bar for breakfast, but probably not by much.

<b>Happy Birthday, Oreo!</b> Today is <b>National Oreo Day</b>! The <b>Oreo</b> is<b> America's Favorite Cookie! </b>This <b>cookie</b> debuted on <b>March 6, 1912</b> produced by the <b>National Biscuit Company (</b>Nabisco, now owned by Kraft<b>)</b>. The original <b>Oreo</b> was packaged as a <b>Trio: the Mother Goose, the Veronese, and the Oreo Biscuit.</b> <b>Oreo</b> was the most popular, and soon was a stand-alone, well as far as cookies go, because you always need milk with <b>Oreos</b>!<br />

In 1921, Nabisco dropped 'Biscuit' from the name and called it <b>'Oreo Sandwich.'</b> In 1948 it was called the <b>'Oreo Creme Sandwich,'</b> and today it's marketed as the <b>Oreo Chocolate Sandwich Cookie</b>. Over the years there have been many variations -- Mini Oreos, Double Delight, Triple stuffed, Lemon-Cream, Chocolate Covered Mint Oreos, Halloween Oreos--even <b>Oreo O's Cereal </b>made by Post. 1 pkg. (8 ounces) Philadelphia Cream Cheese, softened<br />
1 pkg. (15.5 ounces) Oreo Cookies, finely crushed (about 4-1/4 cups), divided<br />
2 pkg. (8 squares each) Baker's Semi-Sweet Chocolate, melted <br />
<br />
<b>Directions</b><br />
Mix cream cheese and 3 cups cookie crumbs until well blended.<br />
Shape into 48 (1-inch) balls. Dip in melted chocolate; place on waxed paper-covered baking sheet. Sprinkle with remaining cookie crumbs.<br />
Refrigerate 1 hour or until firm. Store in tightly covered container in refrigerator.<br />

<i><b>Hint:</b> for Dipping, use two forks to make it easier (and less messy) or a special dipping utensil you can find online or at a kitchen store. I melt chocolate in a double boiler, but if you're careful, you can melt it in the microwave. </i><br />

Today is <b>National Absinthe Day</b>. <b>Absinthe</b> is a strong herbal
liqueur distilled with a large number of herbs like anise, licorice,
hyssop, veronica, fennel, lemon balm, angelica, and wormwood (the flavor
of anise and/or licorice, at least in contemporary forms of the liquor,
tends to predominate). <b> </b><br />
<br />
<b>Wormwood</b>, the one that's gained the most notoriety, is <b>Artemisia absinthum</b>,
an herb that grows wild in Europe and has been cultivated in the United
States as well. Much of the liquor's legendary effect is due to its
extremely high alcohol content, ranging from 50% to 75% (usually around
60%), plus the contribution of the various herbs. <b>It has been assumed
by that the so-called "active ingredient"in absinthe is wormwood,
although that is apparently not really the case.</b><br />
<br />
The drink was referred to in France as "<b>La Fée Verte" or The Green Fairy </b>which is a reference to its green color (<i>depending on the brand</i>).
The color usually came from the chlorophyll content of the herbs used
in the distillation process; however, some disreputable manufacturers
added toxic chemicals to produce both the green color and the louche (or
clouding) effect that in reputable brands was caused by the
precipitation of the essential oils of the herbs. It is quite probable
that the bad reputation absinthe developed was due to these low-grade
and perhaps quite poisonous version of the real thing.<br />
<br />
<b>Absinthe was very popular in fin-de-siècle Paris, with Vincent Van
Gogh, Paul Verlaine, Alfred Jarry and Oscar Wilde among its most famous
imbibers. And, of course, there was Edgar Allan Poe.</b><br />

For this year's <b>Absinthe Food Holiday</b>, I'm posting an easy <b>Chocolate Absinthe Bundt </b>cake recipe<b>. </b>You have to like <b>Absinthe</b> to really enjoy this cake. <b>Always use a name brand absinthe</b>. Just an FYI: <b>Absinthe</b> is an acquired taste. <b>Ingredients</b><br />
1 cup unsalted butter, room temp<br />
2 cups sugar<br />
4 large eggs<br />
1/2 cup Absinthe<br />
2 cups flour<br />
1 cup unsweetened Dark cocoa<br />
1 tsp baking powder<br />
1 tsp baking soda<br />
1/2 tsp salt<br />
1/8 tsp ground anise or fennel seed<br />
1 cup hot water<br />
1 tsp almond extract<br />
1 tsp vanilla extract<br />
<br />
<b>Directions</b><br />
Beat butter at medium speed with electric mixer until fluffy. Gradually add sugar, beating well. Add eggs, 1 at a time, beating until blended after each addition. Add absinthe; beat until blended.<br />
Combine flour and next 5 ingredients; add to sugar mixture alternately with hot water, beginning and ending with flour mixture. Beat at low speed until blended after each addition; stir in flavorings.<br />
Pour batter into greased and floured 9-inch bundt cakepan.<br />
Bake at 300° for 60 minutes. Cool in pan on wire rack for 10 minutes. Today is <b>National Pound Cake Day</b>. <b>Pound Cake</b> is so versatile. You can serve it plain, top with icing or glaze, or dress it up with berries and whipped cream. I like it toasted with unsalted French butter for breakfast.<br /></p><p>The name <b>Pound Cake</b> comes <b>from the fact that the original pound cakes contained one pound each of butter, sugar, eggs, and flour</b>. Made it easy to remember! No leaveners were used other than the air whipped into the batter.
<b>A cake made of one pound of each of butter, sugar, eggs, and flour would have been very large and would have been able to serve multiple families or last multiple days.</b> As years went by, the portions of the ingredients used were adjusted to make a smaller, lighter cake. However, the name of the cake stuck. <b>Pound cakes are generally baked in either a loaf pan or a Bundt pan.</b> They can be iced or dusted with powdered sugar.<br />

I know you're going to love the following recipe for <b>Milk Chocolate Chip Pecan Pound Cake</b>. I left the recipe pretty much as I originally found it on the <b>Hershey's Kitchens</b> website, but, of course, feel free to substitute. It's actually quite awesome with dark chocolate chips, dark cocoa and rich dark chocolate syrup.<br />

2 cups (11.5-oz. pkg.) Hershey's Milk Chocolate Chips, divided<br />
1 cup unsalted butter, softened (<i>Margarine in original recipe as option. I don't use margarine</i>)<br />
1-1/4 cups granulated sugar<br />
3 eggs<br />
2-1/4 cups all-purpose flour<br />
1/4 cup Hershey's Cocoa<br />
1/4 teaspoon baking soda<br />
Dash salt<br />
1 cup buttermilk or sour milk*<br />
3/4 cup Hershey's Syrup<br />
2 teaspoons vanilla extract<br />
1 cup chopped pecans<br />

Heat oven to 350°F. Grease and flour 12-cup fluted tube pan (Bundt pan).<br />
Place 1 cup milk chocolate chips in medium microwave-safe bowl. Microwave at MEDIUM (50%) 1 minute; stir. If necessary, microwave at MEDIUM an additional 15 seconds at a time, stirring after each heating, until chips are melted when stirred.<br />
Beat butter in large bowl until creamy; gradually add granulated sugar, beating on medium speed of mixer until well blended. Add eggs, one at a time, beating well after each addition. Add melted chocolate; beat until blended.<br />

There were no cookies being sold on street corners, nor were there any fathers (or mothers) coercing colleagues or employees to buy multiple boxes, although in retrospect, my father as a pediatrician, could have sold a lot of boxes for me. No, we were responsible for the sale and the delivery of those boxes of cookies. Since I wanted to sell a lot in order to be the 'highest' seller in my area (which I never was), I remember going very far afield one year. My mother actually had to help me deliver all the cookies I sold, especially because she was so astounded by how far afield I had gone. We lived in the city, where neighborhoods changed block by block. No matter, it never occurred to me not to knock on any and every door. Good thing I didn't read adult mysteries or watch the news then. I must have been a Brownie at that time, because I was only a girl scout after we moved to the suburbs. So when I started selling <b>Girl Scout Cookies, I had to be about 8.</b> Times were different. I wore my uniform and with that I was fearless. Kind of like superwoman only my costume was more modest. Still it protected me! In those times, it was all about selling the most cookies, not worrying about the deviant at the door. I got through my sales unscathed except for the development of my fondness for <b>Chocolate Mint Cookies</b> (now <b>Thin Mints)</b>. Yum! <b>Thin Mints</b> make up over 26% of Girl Scout Cookies sales. No surprise to me. <br />

The first <b>Girl Scout handbook</b>, published in 1913, encouraged girls to shoot rifles and gave instructions for tying up intruders. My kind of group! The original Scouts took camping trips and played basketball on outdoor courts shrouded from public view by curtains hung so that men couldn't glimpse the girls in their bloomers. O.K., I'm not much for group sports, but luckily by my time that wasn't necessary since we had gym in school. Outdoor activity also included gardening, and learning the difference between poisonous and non-poisonous mushrooms was in the first handbook. Good to know. <br />

Lest you think that the first Girl Guides in the US (later changed to the Girl Scouts) were not also being trained to be wives and mothers, <b>Juliette Gordon Low</b> had the Girls learn about cooking and preserving food. She wanted them to know how to run a sterile kitchen. She taught about nursing—taking care of invalids and sick children—and sewing. Anything that a wife and mother should do she thought she could train her girls to do better.<br />

1/2 box of Thin Mint Girl Scout Cookies (1 sleeve) + 3 cookies<br />
4 oz Cream Cheese, softened<br />
<br />
In food processor, process 1 sleeve Thin Mints Girl Scout Cookies until they resemble course sand.<br />
Transfer mixture to large bowl and add cream cheese. Mix together by hand until fully incorporated. Scoop out by tablespoon (or use small scoop) and roll into nice ball in your hands to form truffles.<br />
Pulse extra 3 cookies in the food processor until resembles course sand and place in small bowl. Roll truffles in processed cookie crumbs to coat.<br />

Another day, another food holiday! Today is <b>National Banana Cream Pie Day</b>, and this <b>Double Chocolate Banana Cream Pie</b> is a great way of celebrating.<br />
<br />
The first recipe is easy and uses natural ingredients, but don't forget to skim down for an even easier Rachael Ray recipe.<br />

<b>The first recipe uses a chocolate wafer crust, so it's doubly chocolate.</b><br />

<span style="font-size: x-large;"><b>I. DOUBLE CHOCOLATE BANANA CREAM PIE</b></span><br />

<b>CHOCOLATE CRUMB CRUST</b><br />
2 cups chocolate wafer crumbs (whirl a bunch of chocolate wafer cookies in the blender)<br />
2 Tbsp granulated sugar<br />
2 Tbsp melted unsalted butter<br />
<br />
<b>BANANA CREAM FILLING</b><br />
3/4 cup dark chocolate, chopped<br />
1 pint heavy cream<br />
1/4 cup powdered sugar<br />
1 tsp pure vanilla extract<br />
2 eggs<br />
4 Tbsp unsalted butter<br />
2 bananas<br />
<br />
<b>For crust:</b><br />
Combine crumbs, sugar, and melted butter.<br />
Press into 9-inch pie pan, evenly coating bottom and up sides of pie pan.<br />
Chill at least 10 minutes.<br />
<br />
<b>For filling:</b><br />
Whip heavy cream with vanilla and powdered sugar until thick and creamy. Refrigerate.<br />
Heat oven to 350 degrees.<br />
In saucepan, melt 1/2 cup chopped chocolate over low heat.<br />
Remove from heat and whip in 1 cup of whipped topping you previously made and refrigerated.
Beat eggs and add to mixture.<br />
Pour into pie shell and bake for 30 minutes.<br />
Cool 15 minutes.<br />
Slice bananas (cut in 1/4 inch slices) and layer on pie.<br />
Top with remaining whipped cream.<br />
Sprinkle with remaining chopped chocolate and banana slices.<br />

Heat oven to 350°F. Spray with nonstick cooking spray or grease bottom only of 13 x 9-inch pan.<br />
In large bowl, combine brownie mixes, chocolate pouches from mixes, oil, water and eggs; beat 50 strokes with spoon. Fold in chocolate chips. Pour about half of batter into sprayed pan.<br />
In large saucepan, combine condensed milk, peanut butter chips and peanut butter; cook over low heat for 5 minutes or until chips and peanut butter are melted, stirring constantly. <br />
Spoon and spread peanut butter mixture over batter.<br />
Drop remaining half of batter over peanut butter layer.<br />
Sprinkle with chopped peanuts.<br />
Bake at 350°F. for 35 to 40 minutes or until edges begin to pull away from sides of pan.<br />
<b>DO NOT OVERBAKE. </b><br />
Cool 2 hours.<br />
Refrigerate 1-1/2 hours or until completely cooled before serving.<br />

<b>Leap Day, February 29, </b>comes every four years and is the day that keeps our calendar in alignment with the Earth's revolutions around the Sun. Julius Caesar implemented the first leap day into his Julian Calendar in 45 BCE. At that time the <b>leap day</b> was February 24, and February was the last month of the year. In 1582 Pope Gregory XIII introduced the Gregorian Calendar which we use today. This calendar has a more precise formula for calculation of leap years.<br />
<br />
<b>Leap Day</b> is also a holiday of folklore and traditions. On <b>February 29</b>, according to Irish legend, it was a day when women could propose to men. This balanced things out in the same way that the leap day balanced the calendar. And if a man refused the marriage proposal on <b>Leap Day</b>, he was subject to a fine.<br />

<span><b><span style="font-size: large;">Leap Year Chocolate Cake Donuts</span></b></span><br />

<br />
<b>Ingredients</b><br />
1/2 cups sugar<br />
1 tsp baking soda<br />
2 eggs<br />
1/2 tsp salt<br />
4 Tbsp unsalted butter<br />
3 ounces unsweetened chocolate<br />
1 1/2 tsp vanilla extract<br />
1 cup buttermilk<br />
3 1/2 cups all-purpose flour<br />
3 tsp baking powder<br />
1 cup confectioners sugar<br />
1 egg white<br />
1/2 tsp vanilla extract<br />
1 quart vegetable oil for frying<br />
<br />
<b>Directions</b><br />
<i>All ingredients should be room temperature (70 degrees F).</i><br />
Beat sugar and eggs together until creamy and lemon colored.<br />
Melt butter and chocolate together in small saucepan over low heat.<br />
Beat into sugar and egg mixture.<br />
In separate bowl combine vanilla and buttermilk. Stir into sugar mixture.<br />
Combine flour, baking powder, baking soda, and salt in large bowl. Stir into liquid mixture.<br />
Chill dough slightly to make easier to handle.
Roll out half dough on lightly floured board to 1/2 inch thickness. Cut into doughnuts. Allow the cut doughnuts to dry for 10 minutes.<br />
Heat 2 inches of oil to 370 degrees F in large skillet. Dough should be at room temperature before frying. Dip metal pancake turner into hot oil each time before using to move or turn a doughnut. Transfer doughnuts to skillet, one every 15 seconds.<br />
Fry each doughnut about 90 seconds per side. Remove doughnuts and drain on paper towels. Repeat with remaining dough.<br />
<br />
<b>To make icing:</b><br />
Beat sugar, egg white, and vanilla together until smooth.<br />
Drizzle onto the doughnuts after they have cooled.

<span style="font-size: x-large;"><b>EASY KAHLUA TRUFFLES</b></span><br />
<br />
<b>Ingredients</b><br />
8 oz dark chocolate (<i>the better the chocolate, the better these will taste!</i>)<br />
3 Tbsp Kahlua<br />
2 Tbsp unsalted butter<br />
1/2 cup cocoa powder<br />
<br />
<b>Directions </b><br />
Melt chocolate and butter in top of double boiler.<br />
Mix Kahlua into chocolate and butter and beat until smooth.<br />
Put chocolate in a refrigerator until semi-soft (but not rock hard).<br />
Put 1/2 cup cocoa powder on flat plate.<br />
With melon baller, form small balls of chocolate (or roll by hand) and drop onto plate of cocoa powder. Roll around so completely covered.<br />
Put on parchment lined plate or cookie sheet.<br />
Repeat with all chocolate.<br />
When truffles are set and hardened, shake off excess cocoa powder and store in sealed container -- or EAT!!<br />

<br /><b>Ingredients</b><div>3/4 cup Hazelnuts, toasted, skin removed, divided <br />
1/4 cup Toffee candy bits <br />
1 1/4 cups (10oz) Semi-sweet chocolate chips or chopped chocolate <br />
1/2 cup Heavy whipping cream <br />
1/2 teaspoon Vanilla <br />
1/4 teaspoon Salt <br />
20 (6oz) Caramels, unwrapped, cut in half <br />
40 Hazelnuts, whole, toasted, skin removed<br />
<br /><b>Directions</b></div><div>Process 1/4 cup hazelnuts and toffee in food processor or blender until finely ground; set aside. <br />Microwave chocolate chips and cream in small microwave-safe bowl on high for 1 to 1 1/2 <br />
minutes, stirring every 30 seconds until most of chocolate is melted. Do not overheat; lumps will melt when stirred. Stir in hazelnut mixture, vanilla and salt until blended. Cover and set aside until cool, about 1 1/2 hours. <br />Flatten caramel piece and wrap around one whole hazelnut forming a round ball; repeat. Dice remaining 1/2 cup hazelnuts; set aside. <br />Form 1 heaping teaspoon chocolate mixture around each caramel and roll in diced hazelnuts. Let <br />
set until firm.<br />

And, needless to say there is <b>no chocolate</b> in these biscuits. <b>Chocolate is dangerous for dogs, often life-threatening</b>.<br />

<b><span style="font-size: x-large;">HOMEMADE DOG BISCUITS</span></b><br />
<br />
<b>Ingredients</b><br />
3/4 cup powdered skim milk<br />
1/2 cup stone ground cornmeal<br />
1/4 cup bulghur wheat<br />
1-1/4 cups whole wheat flour<br />
1 chicken bouillon cube<br />
1-12/ cups boiling water<br />
1 cup quick cooking rolled oats<br />
1 egg, beaten<br />
<br />
<b>Directions</b><br />
In mixing bowl, combine powdered skim milk, cornmeal, bulghur wheat, and flour. Set aside<br />
In large mixing bowl, dissolve bouillon cube in boiling water. Add rolled oats and let stad about 5 minutes. Stir in beaten egg.<br />
Slowly stir in dry ingredients, half cup at a time, until well blended. Blend last few cups with hands.<br />
Divide dough into 2 balls.<br />
Knead each dough ball on floured surface (5 minutes)<br />
With rolling pin, roll dough between 1/4" to 1/2" thickness<br />
Cut with Bone shaped Biscuit Cutter (or another cookie cutter) and put on baking sheet lined with foil.<br />
Bake 50 minutes at 325.<br />
Turn of oven and let biscuits cool for several hours or overnight, in the oven.<br />
